Tom Kha Gai Recipe

This is the new chicken soup for the soul!  Tom Kha Gai also known as Thai Coconut Soup is definitely one of my favourite soups. Rich in flavour this soup is not just for the winter months but is an all round, soul satisfying soup. The ingredient combinations make this a great soup for colds & flues or for that comfort bowl of goodness. Below is the recipe for you to try. I do make some modifications, so I will also post my them  below. Enjoy, from me to you. ❤

 

Tom Kha Gai 

*Where possible always try the organic option for optimal benefits

Serves 3

Things to grab at the shops:

2 cans of coconut milk

2 cups chicken stock

4 red Thai chillies diced (I use a birds eye chillies for an extra oomph)

1 inch fresh galangal root thinly sliced

1 piece of fresh ginger finely grated

4 pieces of chicken thy fillets thinly sliced

7 mushrooms sliced

2 cans of diced tomatoes

1 stalk of lemon grass chopped into bits

5 Kaffir lime leaves cut into quarters

3 tablespoons of fresh lime juice

2 table spoons of fish sauce

2 tablespoons brown sugar

Fresh Coriander for garnishing

 

Now the fun part!

  1. Bring the coconut milk and chicken stock to boil, add the galangal root, ginger and chillies. Simmer for 10 minutes
  2. Add chicken pieces and stir occasionally until chicken is tenderly cooked
  3. Add mushrooms, thinly sliced lime leaves, small stalks of lemon grass and cans of tomatoes into the soup
  4. Add more chillies if it is not spicy enough
  5. Keep simmering for another 15 minutes (you can simmer for a lot longer and allow the flavours to evolve if you want)
  6. Add brown sugar and fish sauce and stir well
  7. Simmer for another 10 minutes
  8. Serve hot either by itself or over a bed or rice
  9. Sprinkle the freshly cut coriander over the top

I double the above ingredients and make one very large pot. It keeps well in the fridge and it tastes so yum you don’t feel like you’re having the same dinner a few nights in a row. I also am heavy handed with the mushrooms, chicken and coriander and often put in more than the recipe. Once you have made this a few times you will find your own modificational* groove. (I totally made that word up)
